This recipe was passed down from my mom and grandma and is another childhood memory of mine. Growing up, our family loved Mayfield Taco nights. A mix between flour and corn tortillas, this tortilla is soft and east to make. Of course, the sky is the limit on how you can modify this taco, but for this particular dish, it it quite unique in that we usually eat it with plain ground beef and Chris & Pitts BBQ sauce (plus all the toppings). My personal favorites are cheese, green peppers and BBQ sauce.
1 cup yellow cornmeal
2 cups flour
3 cups water
1 tsp salt
1 egg
This dough is super easy to make. It’s a one bowl recipe. Just add all the ingredients together and blend until you get a pancake batter texture. Pour onto a skillet and cook until the edges start to turn up slightly, then flip. Enjoy!
